Consulting Chef Rick Laakkonen will lead the culinary team as they open Jake’s Restaurant, a traditional American steakhouse serving casual fare in East Meadow, NY.

After graduating from The Culinary Institute of America in 1986, Laakkonen earned his culinary stripes working with Chef Charlie Palmer and sous-chef David Burke at The River Café in Brooklyn, New York. After three years, Laakkonen’s interest in pastry and bread making led him to France, where he trained at the renowned Ecole Lenôtre. Next, he served as executive chef at the highly regarded three-star Michelin restaurant Les Pres d’Eugenie before taking a position at Le Louis XV in Monte Carlo, under Alain Ducasse.
In 1991, Laakkonen returned to the United States and became the executive chef at Petrossian in New York, NY. A stint at Luxe followed, where he earned three stars from The New York Times. Chef Laakkonen then returned to The River Café in 1994 as Executive Chef, a position which he held for six years.
In 2000, he opened Ilo in the Bryant Park Hotel, which received praise from The New York Times as “effortlessly inventive but solidly grounded in the fundamentals of flavor, texture and harmony,” and was awarded three stars. In 2002 he earned a nomination from The James Beard Foundation for best new restaurant at Ilo. Most recently, he worked as the executive chef at Delmonico’s in New York, NY.
